The Chemistry of Coffee with Joseph Rivera

Coffee scientist Joseph Rivera will walk you through the coffee’s complex journey from cherry through roasted bean to final cup. We’ll discuss the chemistry that creates the ‘perfect cup’ and explore compositional differences between various origins of coffee. So come bring your coffee questions as we journey down this path together and “Explore the Chemistry in Your CupTM”.

Joseph Rivera holds a degree in Food Chemistry from the California State Polytechnic University. He began his career with the Coffee Quality Institute (CQI), a non-profit research foundation. From 2000 to 2009 he served as the Director of Science & Technology for the Specialty Coffee Association of America (SCAA) to further extend the role of science within the specialty coffee industry. In 2009 he launched coffeechemistry.com - an independent technical consulting firm dedicated to coffee testing, research & development (R&D) and product innovation.
